Description

These Vegan Lasagna Roll Ups offer a delicious and nutritious twist on traditional lasagna, featuring a creamy tofu ricotta and fresh spinach filling wrapped in tender lasagna noodles. Perfect for a satisfying plant-based meal, these roll ups are baked to perfection with rich marinara sauce and a hint of nutritional yeast for an added cheesy flavor.

Ingredients

Scale

Lasagna Components

  • 8 lasagna noodles
  • 1 cup marinara sauce
  • 1 cup marinara sauce (for topping)

Filling

  • 2 cups spinach
  • 1 cup ricotta made from tofu
  • 1/2 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the ideal temperature for baking the lasagna roll ups.
  2. Cook Noodles: Cook the lasagna noodles following package instructions until al dente, then drain and set aside to cool slightly.
  3. Prepare Filling: In a bowl, combine the fresh spinach, tofu ricotta, nutritional yeast, garlic powder, onion powder, salt, and pepper. Mix thoroughly to create a smooth, flavorful filling.
  4. Prepare Baking Dish: Spread a layer of marinara sauce evenly on the bottom of the baking dish to prevent sticking and add moisture.
  5. Assemble Roll Ups: Place a generous spoonful of the tofu-spinach filling onto each lasagna noodle and carefully roll them up from one end to the other.
  6. Arrange in Dish: Place each rolled lasagna seam side down in the prepared baking dish, arranging them evenly.
  7. Add Sauce Topping: Pour and spread the remaining marinara sauce over the top of the arranged roll ups to keep them moist and flavorful while baking.
  8. Bake: Bake the lasagna roll ups in the preheated oven for 25 minutes until heated through and the sauce is bubbling around the edges.

Notes

  • You can substitute fresh spinach with frozen, just be sure to thaw and squeeze out excess water before mixing.
  • To make the tofu ricotta, blend soft tofu with a splash of lemon juice, nutritional yeast, and seasonings if not homemade.
  • For extra flavor, add fresh herbs like basil or oregano to the filling mix.
  • Make sure not to overcook the noodles to avoid breaking when rolling.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
