Ingredients
Scale
For the Cheesecake Bites:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
For the Fruit Salad:
- 2 cups strawberries, halved
- 2 cups green grapes
- 1 cup red grapes
For the Toppings:
- ½ cup caramel sauce
- ¼ cup crushed graham crackers or cookie crumbs
- ¼ cup chopped peanuts or pecans
- ¼ cup white chocolate drizzle
Instructions
- Prepare the Cheesecake Bites: In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Cut the cheesecake mixture into small squares and chill in the fridge for 30 minutes.
- Assemble the Fruit Salad: Once the cheesecake bites are chilled, take a serving dish and layer the strawberries, green grapes, red grapes, and cheesecake bites evenly.
- Sprinkle and Drizzle: Sprinkle the crushed graham crackers and chopped nuts evenly over the top. Drizzle caramel sauce and white chocolate drizzle over everything. Serve immediately or refrigerate for 30 minutes for an extra chilled dessert.
Notes
- Use fresh, ripe fruit for the best flavor and texture.
- Allow cheesecake bites to chill well for easier cutting and better structure.
- For a nut-free version, omit the chopped peanuts or pecans.
- Serve chilled for a refreshing summer dessert.
- Can be prepared a few hours ahead and kept refrigerated.
