Perfect for game days, parties, or a tasty snack, these bites are easy to make and sure to impress.

Ingredients

Scale

Buffalo Chicken Filling

  • 1 cup cooked chicken, shredded
  • 2 tablespoons buffalo sauce
  • 2 tablespoons cream cheese, softened
  • ¼ cup shredded mozzarella cheese
  • ¼ cup shredded cheddar cheese
  • 1 tablespoon ranch dressing
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt & black pepper, to taste

Pastry and Finishing

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon butter, melted
  • 1 teaspoon chopped fresh parsley (for garnish)
  • ¼ teaspoon flaky sea salt (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Buffalo Chicken Filling: In a mixing bowl, combine the shredded cooked chicken, buffalo sauce, softened cream cheese, shredded mozzarella and cheddar cheeses, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Prepare the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet evenly. Then, cut the pastry into 9 equal squares for the bites.
  4. Fill and Seal the Pastry: Spoon a portion of the buffalo chicken mixture into the center of each pastry square. Carefully fold the corners of each square towards the center and pinch them together to seal, creating small pouches.
  5. Bake the Pastry Bites: Place the sealed pastries seam-side down onto the prepared baking sheet. Brush the tops with the beaten egg to help achieve a golden and shiny finish. Bake in the preheated oven for 18-20 minutes, or until they turn golden brown and flaky.
  6. Finish and Serve: After baking, brush each warm pastry bite with melted butter for added richness. Sprinkle with chopped fresh parsley and flaky sea salt if desired. Serve immediately and enjoy warm, ideally with ranch or blue cheese dressing for dipping.

Notes

  • Make sure the cream cheese is softened to mix evenly with the other ingredients.
  • For extra heat, add more buffalo sauce or include some finely chopped jalapeños.
  • These bites are best served fresh from the oven but can be reheated in a toaster oven to maintain crispiness.
  • Use fresh parsley for garnish and flavor enhancement.
  • If you prefer a milder flavor, reduce the buffalo sauce or substitute with a milder wing sauce.
