  • 400 g vegan marshmallows
  • 2 tablespoons vanilla extract
  • 50 g vegan mini marshmallows (or regular vegan marshmallows chopped into small cubes)
  • 180 g vegan rice cereal (use gluten-free if required)
  • Vegan sprinkles (for garnish, optional)


Instructions

  1. Prepare Pan: Line a 9-inch pan or a similar sized baking dish with parchment paper to prevent the treats from sticking and set aside.
  2. Melt Butter: Place 80 g of vegan salted butter in a saucepan and melt it over medium heat until fully liquefied.
  3. Melt Marshmallows: Add 400 g of vegan marshmallows to the melted butter. Stir continuously over low to medium heat using a spatula until the marshmallows are completely melted into a smooth mixture. Keep the heat low to prevent the mixture from becoming tacky or difficult to work with.
  4. Add Vanilla and Mini Marshmallows: Remove the saucepan from heat and whisk in 2 tablespoons of vanilla extract until the mixture is smooth. Stir in 50 g of mini vegan marshmallows and transfer the mixture to a large mixing bowl if the saucepan is small.
  5. Combine with Rice Cereal: Add 180 g of vegan rice cereal to the marshmallow mixture. Gently fold the cereal into the marshmallow mixture using a spatula, ensuring all the cereal is coated. Work quickly while the mixture is still warm.
  6. Press Mixture in Pan: Spoon the combined mixture into the prepared pan. Use a spatula or the back of a spoon to press it evenly into the base and edges for compactness.
  7. Cool and Slice: Allow the treats to cool at room temperature for 15-20 minutes. Once set, slice into 12 equal portions. Top with extra vegan mini marshmallows and vegan sprinkles if desired.
  8. Storage: Store the treats in an airtight container at room temperature for 2-3 days to maintain freshness and texture.
