Instructions

  1. Brown the Sausage: In a large pot or Dutch oven set over medium heat, cook the Italian sausage until browned and fully cooked through, breaking it up into crumbles as it cooks. Remove any excess grease if necessary to avoid a greasy soup base.
  2. Sauté Aromatics: Add the diced onion to the same pot and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Simmer: Add the thinly sliced Yukon Gold potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 12 to 15 minutes until the potatoes are tender and cooked through.
