With optional cheddar cheese for added richness and fresh dill for extra herbaceous notes, this salad is easy to prepare and sure to impress your guests.

Ingredients

Scale

Pasta and Vegetables

  • 3 cups cooked pasta (elbow macaroni, rotini, or shells)
  • 1 1/2 cups dill pickles, diced
  • 1/3 cup shredded carrots (optional)
  • 1/3 cup red onion, finely diced
  • 1/2 cup cheddar cheese, cubed (optional)
  • 1/4 cup fresh dill, chopped (or 2 tsp dried dill)

Dressing

  • 3/4 cup mayonnaise
  • 1/3 cup sour cream or plain Greek yogurt
  • 1/4 cup pickle juice (adjust to taste)
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and black pepper to taste

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Drain the pasta, rinse it under cold water to stop the cooking process, and let it cool completely to prevent the salad from becoming soggy.
  2. Prepare the Dressing: In a medium bowl, whisk together mayonnaise, sour cream or Greek yogurt, pickle juice, Dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Taste the dressing and adjust the seasoning or pickle juice as needed to get the perfect tangy flavor.
  3. Assemble the Salad: In a large mixing bowl, combine the cooled pasta, diced dill pickles, shredded carrots if using, finely diced red onion, cubed cheddar cheese if using, and fresh or dried dill. Mix gently to combine all ingredients evenly.
  4. Mix and Chill: Pour the prepared dressing over the pasta mixture. Toss well until every ingredient is coated with the creamy dressing. Cover the bowl and refrigerate the salad for at least 1 hour to allow the flavors to meld and the salad to chill thoroughly.
  5. Serve: Serve the pasta salad chilled. Garnish with additional fresh dill or diced pickles if desired for an attractive presentation and added freshness.

Notes

  • Use plain Greek yogurt instead of sour cream for a healthier twist and added protein.
  • Adjust the amount of pickle juice to taste depending on how tangy you like your salad.
  • This salad tastes best after chilling for at least 1 hour but can be stored for up to 2 days in the refrigerator.
  • For a dairy-free option, omit the cheddar cheese and substitute the sour cream with a dairy-free yogurt.
  • Add chopped celery or bell peppers for extra crunch and color.
