Description

Taco Potatoes are a delicious and satisfying meal featuring baked russet potatoes loaded with seasoned ground beef and classic taco toppings like cheddar cheese, sour cream, tomatoes, and salsa. This easy recipe combines the comfort of a baked potato with the bold flavors of a taco, perfect for a quick weeknight dinner or casual gathering.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes
  • 1 tablespoon olive oil

Meat and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1/2 cup water

Toppings

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives
  • 1/2 cup shredded lettuce
  • 1/2 cup salsa

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the potatoes.
  2. Prepare Potatoes: Scrub the russet potatoes thoroughly to remove any dirt, then pat them dry with a towel. Rub each potato lightly with olive oil to help crisp the skin during baking.
  3. Bake Potatoes: Place the potatoes on a baking sheet and bake for 45 to 60 minutes until they are tender when pierced with a fork. This ensures a fluffy interior.
  4. Cook Ground Beef: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart into crumbles as it cooks.
  5. Season Beef: Drain any excess grease from the skillet, then add the taco seasoning and water to the beef. Stir well and simmer for about 5 minutes until the mixture thickens and the flavors meld.
  6. Assemble Taco Potatoes: Once the potatoes are fully cooked, slice each one lengthwise down the center and fluff the inside with a fork to create a soft base for the toppings.
  7. Add Toppings: Spoon the seasoned taco meat over the fluffed potatoes, then layer with shredded cheddar cheese, sour cream, diced tomatoes, green onions, black olives, shredded lettuce, and salsa to your preference.
  8. Serve Warm: Serve immediately while the potatoes and toppings are warm for the best flavor and texture.

Notes

  • You can substitute ground turkey or ground chicken for a lighter, leaner protein option.
  • Add jalapeños, avocado slices, or guacamole to enhance flavor and texture.
  • For faster preparation, microwave the potatoes for 8 to 10 minutes until tender instead of baking.
