Description

Syrniki are traditional Ukrainian cheese pancakes made from farmer’s cheese, lightly sweetened and fried until golden brown. These fluffy and tender pancakes are perfect for breakfast or dessert and often served with sour cream or fresh fruit. This recipe includes optional dried cherries for a fruity twist.

Cheese Pancakes

  • 1 lb farmer’s cheese (or well drained ricotta or cottage cheese)
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup all purpose flour (plus an additional ½ cup for dredging)
  • ½ tsp baking powder
  • ¼ cup sugar
  • ¼ tsp salt
  • ½ cup dried cherries or raisins (optional)

For Frying

  • 8 tbsp avocado oil (or vegetable oil or any light frying oil)


Instructions

  1. Prepare the Cheese Mixture: In a large bowl, combine the farmer’s cheese with eggs, vanilla extract, sugar, and salt. Mix well until smooth and creamy. Add the baking powder and ½ cup of flour and mix until incorporated. Gently fold in the dried cherries or raisins if using.
  2. Form the Pancakes: Lightly flour your hands and shape the cheese mixture into small patties about 1 inch thick and 2-3 inches in diameter. Use the additional ½ cup of flour to dredge each patty, coating lightly on all sides. This helps create a crispy exterior when fried.
  3. Heat the Oil: Pour the avocado oil into a large non-stick skillet or frying pan and heat over medium heat until the oil is hot but not smoking. The oil should be sufficient to cover the base of the pan evenly.
  4. Fry the Syrniki: Carefully place the cheese pancakes into the hot oil without overcrowding the pan. Fry on each side for about 3-4 minutes until golden brown and crispy. Use a spatula to gently flip them to avoid breaking. Adjust the heat as necessary to prevent burning while ensuring thorough cooking.
  5. Drain and Serve: Transfer the cooked syrniki to a paper towel-lined plate to absorb excess oil. Serve warm with sour cream, honey, or fresh berries for a delightful breakfast or dessert experience.
