Sushi Rice

  • 2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar

Sushi Bake Topping

  • 12 ounces fresh salmon, finely chopped
  • 1/3 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 teaspoon sesame oil
  • 1/4 cup cream cheese, softened
  • 2 tablespoons soy sauce
  • 1/4 cup green onions, finely sliced
  • 1/2 cup imitation crab meat, chopped (optional)
  • 1/2 cup shredded mozzarella cheese (optional)
  • 2 tablespoons furikake seasoning

For Serving

  • 1 sheet nori, cut into small squares
  • 1 avocado, sliced (optional)


Instructions

  1. Prepare the Sushi Rice: Preheat your oven to 375°F. In a small bowl, mix the rice vinegar, sugar, and salt until fully dissolved. Place the cooked sushi rice in a large bowl and gently fold in the vinegar mixture until the rice is evenly seasoned.
  2. Assemble the Rice Layer: Lightly grease a 9×9 inch baking dish and spread the seasoned sushi rice evenly in the dish. Sprinkle half of the furikake seasoning over the top of the rice layer to infuse additional flavor.
  3. Make the Spicy Salmon Mixture: In a separate bowl, combine the finely chopped fresh salmon, mayonnaise, sriracha sauce, sesame oil, softened cream cheese, soy sauce, green onions, and the optional imitation crab meat if using. Mix thoroughly until all ingredients are well incorporated.
  4. Assemble the Bake: Spread the spicy salmon mixture evenly on top of the furikake-seasoned rice layer. Sprinkle the remaining furikake seasoning on top of the salmon layer. If desired, add the shredded mozzarella cheese over everything for a cheesy finish.
  5. Bake the Sushi Casserole: Place the baking dish in the preheated oven and bake for 15 to 18 minutes, until the dish is heated through and the cheese (if added) is slightly golden and bubbly.
