- 1 small can sweet corn, drained
- 1 heart romaine lettuce, chopped
Seasoning & Sauce
- 1 packet (1 ounce) taco seasoning
- 1/4 cup water
- 1 bottle Caesar dressing (Brianna’s brand recommended)
Other
- 5 large spinach tortillas/wraps
- Shredded cheddar cheese (amount as desired)
Instructions
- Cook chicken and bell pepper: In a large non-stick skillet over medium-high heat, add the chicken pieces. Stir and cook for about 5 minutes. Then add diced red bell pepper, taco seasoning, and 1/4 cup water. Bring the mixture to a boil, reduce the heat to medium, and continue cooking, stirring occasionally until the chicken is fully cooked through with no pink inside and the mixture has thickened, about 10 minutes. Remove from heat.
- Heat black beans and corn: While the chicken cooks, place the rinsed and drained black beans in a small saucepan and heat over low heat until warmed through. Optionally, heat the sweet corn as well. Remove from heat once warmed.
- Assemble the wraps: Lay the spinach tortillas on a clean surface. Evenly distribute the chicken and bell pepper mixture down the center of each tortilla. Top with chopped romaine lettuce, black beans, corn, shredded cheddar cheese, and a generous drizzle of Caesar dressing. Fold the tortillas burrito-style, securing the fillings inside.
