Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 cup frozen corn
Liquids and Sauces
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon mustard
Cheese and Dairy
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
Seasonings and Oils
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil (for browning the beef)
Optional Garnishes
- Chopped green onions
- Crispy bacon bits
Instructions
- Brown the Ground Beef: In a skillet, heat olive oil over medium heat. Add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are softened. Drain any excess fat to keep the soup from being greasy.
- Add to Slow Cooker: Transfer the browned beef mixture into the slow cooker. Then add the beef broth, diced potatoes, frozen corn, Worcestershire sauce, ketchup, mustard, smoked paprika if using, and season with salt and pepper. Stir everything well to combine the flavors.
- Cook: Cover the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours. Cook until the potatoes are tender and the soup flavors have melded beautifully.
- Add the Cheese: About 30 minutes before serving, stir in the shredded cheddar and mozzarella cheese. Allow the cheese to melt into the soup for a rich, creamy texture.
- Finish with Sour Cream: Just before serving, stir in the sour cream to add a smooth and tangy creaminess. Taste and adjust seasoning with more salt and pepper if needed.
- Serve: Ladle the soup into bowls and garnish with chopped green onions and crispy bacon bits if desired for added flavor and texture.
Notes
- For extra smoky flavor, consider adding a dash of smoked paprika or a few drops of liquid smoke.
- To make it lower in fat, use lean ground beef and reduce or omit the sour cream.
- If you prefer a thicker soup, reduce the amount of beef broth or mash some of the potatoes before serving.
- This soup can be prepared a day ahead; flavors develop more deeply when reheated.
- Freeze leftovers in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
