Description

This Sheet-Pan Sausage & Peppers recipe delivers a delicious and easy Italian-American meal featuring savory Italian sausage links baked alongside vibrant bell peppers and red onions. Coated in olive oil and seasoned with Italian herbs and garlic powder, the sausage and vegetables roast together to caramelized perfection on a single sheet pan, making cleanup a breeze. Perfect for a quick weeknight dinner or meal prep, this dish can be served on hoagie rolls, over rice, or with roasted potatoes, offering a flavorful and hearty main course.

Ingredients

Scale

Meat

  • 1 pound Italian sausage links (mild or spicy)

Vegetables

  • 3 bell peppers (red, yellow, and green), sliced
  • 1 large red onion, sliced

Seasonings and Garnish

  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil to ensure easy cleanup after baking.
  2. Prepare Ingredients on Sheet Pan: Arrange the Italian sausage links, sliced bell peppers, and red onion evenly on the prepared sheet pan. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and black pepper. Toss the vegetables gently to coat them evenly with the seasonings and oil, while keeping the sausages positioned on top or nestled between the veggies.
  3. Bake: Place the sheet pan in the oven and bake for 25 to 30 minutes. About halfway through the cooking time, flip the sausage links to ensure they brown evenly. Continue baking until the sausages are cooked through (an internal temperature of 160°F or 71°C) and the vegetables are tender with slight caramelization.
  4. Garnish and Serve: Remove the sheet pan from the oven and optionally sprinkle chopped fresh parsley over the top for a burst of color and fresh flavor. Serve the sausage and peppers hot, either on hoagie rolls, over steamed rice, or alongside roasted potatoes.

Notes

  • You can slice sausages before baking for faster cooking or keep them whole for juicier results.
  • Add cherry tomatoes or zucchini to the sheet pan for extra color and enhanced flavors.
  • This dish works well for meal prep as leftovers reheat beautifully.
