- Boil the base mixture: In a large pot, combine the unsalted butter, granulated sugar, milk, and vanilla extract. Bring the mixture to a rolling boil over medium heat and maintain the boil steadily for 2 minutes to properly dissolve the sugar and meld the flavors.
- Combine remaining ingredients and set cookies: Remove the pot from heat and immediately stir in the powdered vanilla coffee creamer, instant pumpkin spice pudding mix, salt, pumpkin pie spice, and 1-minute oatmeal. Mix thoroughly until everything is well incorporated. Using a large spoon, drop spoonfuls of the mixture onto wax paper. Allow the cookies to cool and set for about one hour until firm.
