Description
Pistachio Lush is a delectably creamy, no-bake layered dessert featuring a buttery graham cracker crust, a smooth cream cheese layer, velvety pistachio pudding, and a light whipped topping finish sprinkled with crunchy pistachios. It’s an easy-to-make treat perfect for holidays, potlucks, or any occasion where a luscious, flavorful dessert is desired.
Ingredients
Scale
For the crust:
- 1 1/2 cups graham cracker crumbs (or crushed vanilla wafers)
- 1/2 cup unsalted butter, melted
For the cream cheese layer:
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping (like Cool Whip)
For the pistachio pudding layer:
- 2 (3.4-ounce) boxes instant pistachio pudding mix
- 2 1/2 cups cold milk
Topping:
- 2 cups whipped topping
- 1/4 cup chopped pistachios (for garnish)
Instructions
- Prepare the crust: In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9×13-inch dish to form an even crust. Place the crust in the refrigerator to chill while you prepare the next layer.
- Make the cream cheese layer: In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Gently fold in 1 cup of whipped topping until fully incorporated. Spread this creamy mixture evenly over the chilled crust layer.
- Prepare the pistachio pudding layer: In another bowl, whisk together the instant pistachio pudding mixes and cold milk vigorously for 2 to 3 minutes until the pudding thickens. Spread the thickened pudding evenly over the cream cheese layer.
- Add the topping and garnish: Smooth the remaining 2 cups of whipped topping over the pudding layer to create a light final layer. Sprinkle the chopped pistachios evenly over the top for a crunchy and visually appealing garnish.
- Chill to set: Cover the entire dessert and refrigerate for at least 4 hours, or preferably overnight, to allow all layers to set and flavors to meld for the best texture and taste.
Notes
- For a variation, try using a shortbread or Oreo crust instead of graham crackers for a different flavor base.
- If you need a nut-free version, substitute the pistachio pudding with vanilla pudding and omit the chopped pistachios from the topping.
- This dessert is ideal for making ahead of time and holds up well for holidays, potlucks, and gatherings.
