Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a wholesome and flavorful one-pan meal featuring tender chicken breasts coated with a crispy parmesan and breadcrumb crust, roasted red potatoes, and fresh green beans all baked together for easy preparation and minimal cleanup. It’s a perfect weeknight dinner that combines savory, crispy textures and vibrant vegetables in a simple, oven-baked dish.

Ingredients

Scale

Chicken

  • 1½ lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • â…“ cup grated parmesan
  • â…“ cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning if using plain)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quartered if small; 6ths or 8ths if larger)
  • 1 – 2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 425°F. Line a sheet pan with parchment paper or spray it lightly with cooking oil for easier cleanup.
  2. Prepare and roast potatoes: In a medium bowl, toss the cut red potatoes with minced garlic, olive oil, parmesan, salt, and pepper until well coated. Spread the potatoes evenly over one-third of the sheet pan. Place in the oven and roast for 10-15 minutes, depending on your preference for browning (longer for more crispiness).
  3. Coat and add chicken: While the potatoes roast, use the same bowl to toss the chicken breasts with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt until fully coated. After the potatoes have cooked, remove the pan from the oven and arrange the chicken breasts on another section of the pan, then return it to the oven.
  4. Prepare and add green beans: Toss trimmed green beans with olive oil, garlic, parmesan (if using), salt, and pepper. Add the green beans to the remaining space on the sheet pan.
  5. Finish baking: Bake everything together for about 25 more minutes, or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, switch the oven to broil high for an additional 4-5 minutes, watching carefully to prevent burning.
  6. Serve: Remove the sheet pan from the oven and let cool for several minutes before serving. Enjoy your hearty, Parmesan Crusted Chicken Sheet Pan Dinner!

Notes

  • For extra flavor, sprinkle plain breadcrumbs with Italian seasoning before coating chicken.
  • To ensure even cooking, cut potatoes uniformly sized.
  • Monitor green beans during roasting to maintain desired tenderness.
  • Broiling at the end crisps potatoes perfectly but requires careful attention.
  • Use a meat thermometer to confirm chicken is safely cooked to 165°F internal temperature.
