Instructions
- Prepare the Beans: Rinse the dried red beans thoroughly under cold water to remove any debris. Soak them overnight in a large pot filled with enough water to cover, allowing the beans to hydrate and soften.
- Cook the Beans: Drain and rinse the soaked beans. Heat the vegetable oil in a large pot over medium heat, then add the chopped onion, green bell pepper, and celery. Cook the vegetables until they are softened and fragrant, about 5 to 7 minutes.
- Add Seasonings: Stir in the minced garlic, dried thyme, dried oregano, bay leaves, cayenne pepper, and salt. Cook this mixture for about 2 minutes to deepen the flavors and release the aromas.
- Simmer Beans: Add the drained beans back into the pot and pour in enough water to cover them by 2 inches. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 1.5 to 2 hours, or until the beans are tender and creamy.
- Add Sausage: Stir in the sliced smoked sausage. Continue simmering for another 30 minutes to allow the sausage to heat through and infuse the beans with its smoky flavor.
- Finish and Serve: Remove the bay leaves and taste the beans to adjust the salt and seasoning as needed. Serve the red beans and sausage hot over cooked rice for a traditional and satisfying New Orleans meal.
