Instructions
- Prepare the double boiler: Fill a saucepan with 2 inches of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, ensuring the bowl does not touch the water.
- Combine ingredients: Add the egg whites, granulated sugar, cream of tartar, and a pinch of salt into the heatproof bowl. Begin whisking constantly to prevent the eggs from cooking unevenly.
- Heat and dissolve sugar: Whisk the mixture for 4–5 minutes until the sugar is fully dissolved and the mixture reaches 160°F (71°C). Test by rubbing a small amount between your fingers; it should feel smooth without grit.
- Whip to stiff peaks: Transfer the warm mixture to a stand mixer or use a hand mixer to beat on high speed for 6–8 minutes until stiff, glossy peaks form and the bowl feels cool to the touch.
- Add flavorings: Stir in the vanilla extract along with any optional almond extract or lemon juice. Beat for another 30 seconds to combine thoroughly.
- Use or store: Use the frosting immediately by piping or spreading on your baked goods. If not using right away, refrigerate for up to 2 hours and whisk again briefly before serving to restore texture.
