Ingredients
Scale
Marinade
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons Worcestershire sauce
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
Mushrooms
- 1 pound button mushrooms, cleaned and stems trimmed
- Wooden or metal skewers
Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, smoked paprika, salt, and freshly ground black pepper until smooth and well combined.
- Marinate the Mushrooms: Add the cleaned and trimmed button mushrooms to the marinade. Stir to coat all mushrooms evenly. Cover and refrigerate for at least 30 minutes, but preferably 2 to 3 hours to maximize flavor absorption.
- Soak the Skewers: If you are using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning on the grill.
- Preheat the Grill: Heat your grill to medium-high heat, ensuring it is hot and ready for cooking the mushrooms evenly.
- Assemble the Skewers: Thread the marinated mushrooms onto the skewers, leaving a little space between each mushroom to allow even cooking and smoke circulation.
- Grill the Mushrooms: Place the mushroom skewers on the preheated grill. Cook for 10 to 12 minutes, turning occasionally to achieve even grilling and a nice char on all sides.
- Serve and Enjoy: Remove the skewers from the grill, garnish with fresh parsley or your favorite herbs if desired, and serve immediately as a delicious appetizer or side dish.
Notes
- For extra flavor, you can add a squeeze of lemon juice before serving.
- If you do not have a grill, mushrooms can be cooked under a broiler or in a grill pan on the stovetop.
- Vegetarian and vegan-friendly if using maple syrup instead of honey and ensuring Worcestershire sauce is vegan.
- Marinating longer than 3 hours is okay but avoid exceeding 6 hours to prevent mushrooms from becoming too soggy.
- Use olive oil or avocado oil for a healthier fat option in the marinade.
