Description

These Lunch Lady Brownies are a nostalgic treat featuring a rich, fudgy brownie base topped with a smooth, creamy chocolate frosting. Made with simple pantry ingredients and baked to perfection, they’re sure to satisfy any chocolate craving with their classic taste and moist texture.

Ingredients

Scale

Brownies

  • 1 cup salted butter (melted)
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

Chocolate Frosting

  • 1/4 cup salted butter (softened)
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350° F (177° C). Line a 9×13-inch baking dish with parchment paper and spray the parchment with non-stick spray to ensure easy removal of the brownies.
  2. Mix Brownie Batter: In the bowl of an electric stand mixer fitted with the paddle attachment, combine the melted butter and 1/2 cup cocoa powder. Beat until smooth and well incorporated.
  3. Add Dry and Wet Ingredients: Add the all-purpose flour and granulated sugar to the cocoa mixture and beat together. Then add the eggs and vanilla extract. Mix just until everything is combined, being careful not to overmix as the batter should remain thick.
  4. Bake the Brownies: Pour the thick brownie batter evenly into the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Once baked, remove from oven and let stand for 15 minutes. The brownies should still be warm before frosting.
  5. Prepare the Chocolate Frosting: In a separate bowl, beat together the softened salted butter, 2% milk, 1/4 cup unsweetened cocoa powder, and powdered sugar until the frosting is smooth and creamy.
  6. Frost the Brownies: Pour the chocolate frosting over the warm brownies and spread it evenly. Allow the brownies to cool completely so the frosting sets before cutting and serving.

Notes

  • Use parchment paper and non-stick spray to easily lift brownies from the pan without sticking.
  • Do not overmix the batter to keep the brownies tender and fudgy.
  • Frost warm brownies to ensure an easy spread and smooth frosting finish.
  • Allow brownies to cool completely after frosting for clean slices.
  • You can store brownies in an airtight container at room temperature for up to 3 days.
