Description

Lunch Lady Brownies are rich, moist, and deliciously chocolatey treats topped with a smooth and creamy chocolate frosting. This classic dessert is perfect for gatherings or everyday indulgence, offering a perfect balance of dense brownie texture with a sweet, velvety frosting.

Ingredients

Scale

Brownies

  • 1 cup salted butter (melted)
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

Chocolate Frosting

  • 1/4 cup salted butter (softened)
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, then spray the parchment with non-stick spray to ensure easy release of the brownies later. Set aside.
  2. Mix Brownie Batter: In the bowl of an electric stand mixer fitted with the paddle attachment, combine the melted butter and 1/2 cup of unsweetened cocoa powder. Blend until the mixture is smooth and consistent.
  3. Add Dry Ingredients: Add the flour and granulated sugar to the bowl, mixing them together with the cocoa-butter mixture. Then, incorporate the eggs and vanilla extract, mixing just until everything is combined. Be careful not to overmix; the batter will be thick.
  4. Bake Brownies: Pour the thick brownie batter evenly into the prepared baking dish. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the brownies from the oven and let them stand for 15 minutes. The brownies should still be warm when you frost them for best results.
  5. Prepare Chocolate Frosting: In a separate bowl, beat together the softened butter, 2% milk, unsweetened cocoa powder, and powdered sugar until smooth and creamy.
  6. Frost Brownies: Pour and spread the chocolate frosting evenly over the warm brownies. Allow the brownies to cool completely before cutting into squares and serving.

Notes

  • Do not overmix the batter to keep the brownies tender and dense.
  • Frost the brownies when they are still warm to help the frosting spread easily and adhere well.
  • Use parchment paper for easier removal and cleaner edges.
  • For a richer flavor, use high-quality cocoa powder and salted butter.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
