Ingredients
Scale
Hash Browns
- 4 cups frozen shredded hash browns, thawed and patted dry
- 2 tablespoons olive oil or butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Eggs
- 6 large eggs
- 2 tablespoons milk
Toppings
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 1/4 cup green onions, sliced
Serving Options
- Optional sour cream or hot sauce for serving
Instructions
- Cook the Hash Browns: Heat olive oil or butter in a large skillet over medium heat. Add the thawed hash browns in an even layer and season with salt and black pepper. Cook undisturbed for 8-10 minutes until the bottom is golden and crispy. Flip the hash browns and cook an additional 5-7 minutes until fully crispy on both sides.
- Prepare the Eggs: While the hash browns cook, whisk together the eggs and milk in a bowl until fully combined and slightly frothy.
- Scramble the Eggs: Push the hash browns slightly to one side of the skillet. Pour the egg mixture into the empty side. Reduce heat to medium-low and gently scramble the eggs, stirring slowly until they are soft and just set.
- Combine Ingredients: Mix the scrambled eggs into the hash browns evenly throughout the skillet.
- Add Cheese and Bacon: Sprinkle shredded cheddar cheese and crumbled cooked bacon evenly over the top. Cover the skillet with a lid and cook for 2-3 minutes until the cheese has melted.
- Garnish and Serve: Remove from heat. Garnish with sliced green onions and serve immediately with optional sour cream or hot sauce for extra flavor.
Notes
- For extra flavor, season the hash browns with garlic powder or smoked paprika.
- Add sautéed peppers, onions, or mushrooms to increase vegetable content and flavor.
- This recipe works well with leftover roasted potatoes as a substitute for hash browns for a different texture.
