Ingredients
Scale
Chicken and Coating
- 4 boneless, skinless chicken breasts or thighs
- 1 cup crushed cornflakes or panko breadcrumbs
- 1 tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp olive oil or butter
Topping and Glaze
- ½ cup feta cheese (crumbled or sliced)
- ½ cup honey
- 1 tsp red pepper flakes
- 1 tsp apple cider vinegar (optional)
Instructions
- Preheat the Oven or Air Fryer: Set your oven to 400°F (200°C) or preheat an air fryer to 375°F. This ensures your chicken will cook evenly and develop a crispy coating.
- Season the Chicken: Pat the chicken breasts or thighs dry. Season both sides generously with salt, pepper, and smoked paprika for a smoky, flavorful base.
- Coat the Chicken: Brush the chicken pieces with olive oil or melted butter. Then press each piece into the crushed cornflakes or panko breadcrumbs to create a crunchy crust.
- Cook the Chicken: Place the coated chicken on a baking tray or air fryer basket. Bake in the oven for 18–22 minutes or air fry for 12–15 minutes until the chicken is cooked through and the coating is golden and crisp.
- Add the Feta Cheese: Remove the chicken briefly and top each piece with crumbled or sliced feta cheese. Return to the oven or air fryer for another 3–5 minutes to slightly melt the cheese without losing its texture.
- Prepare the Hot Honey: While the chicken finishes cooking, combine honey, red pepper flakes, and optional apple cider vinegar in a small saucepan or microwave-safe container. Warm until combined and fragrant.
- Serve with Hot Honey Drizzle: Once the chicken is fully cooked and topped with feta, drizzle generously with the prepared hot honey glaze just before serving to add a sweet and spicy finish.
Notes
- You can use chicken breasts or thighs depending on your preference for lean or slightly fattier meat.
- Panko breadcrumbs will give a lighter, airier crunch, while crushed cornflakes add a slightly sweeter texture.
- Adjust the amount of red pepper flakes in the hot honey to control spiciness.
- For a dairy-free option, omit the feta or substitute with a vegan cheese alternative.
- The apple cider vinegar in the hot honey adds a slight tang but is optional.
