Fruit and Yogurt Mixture
- 1 1/2 cups diced strawberries (approx. 250g after dicing)
- 1 cup vanilla Greek yogurt (or dairy-free Greek yogurt, approx. 240g)
- 2 tbsp honey (or pure maple syrup, can omit if using sweetened yogurt)
Chocolate Coating
- 1 cup chocolate chips (approx. 170g)
- 1 tbsp coconut oil (approx. 12g) (optional, for smoother chocolate)
Instructions
- Prepare the base: Line a baking sheet or large platter with wax or parchment paper to ensure the clusters don’t stick and are easy to remove after freezing.
- Mix ingredients: In a large mixing bowl, combine the diced strawberries, vanilla Greek yogurt, and honey or pure maple syrup. Stir thoroughly until all components are evenly mixed.
- Form clusters: Using a spoon, drop dollops of the strawberry yogurt mixture onto the lined baking sheet. Then gently spread each dollop into a patty shape with the back of the spoon to form uniform clusters.
- Freeze the clusters: Place the baking sheet in the freezer and freeze the clusters for at least three hours or preferably overnight until they are completely solid.
- Melt the chocolate: Carefully melt the chocolate chips. This can be done in the microwave in short bursts or using the double boiler method on the stovetop. For a smoother, easier-to-coat chocolate, stir in the optional coconut oil once the chocolate is melted.
- Coat the clusters: Remove the frozen clusters from the freezer. Dip each cluster into the melted chocolate ensuring they are thoroughly covered. Place the coated clusters back onto the lined sheet and return them to the freezer to allow the chocolate to set for a few minutes.
- Serve and store: Enjoy these clusters cold for a refreshing treat. Store any leftovers in a covered container in the freezer, where they will stay fresh for up to three months.
