This Ground Turkey Egg Roll Bowl is a quick and flavorful dish inspired by the classic egg roll filling but served in a healthy, low-carb bowl form. - 1 Tbsp olive oil
- 3 green onions, chopped (separate whites from greens)
- 1 lb ground turkey
- 16 oz cole slaw mix (shredded cabbage and carrots)
- 1 cup shredded carrots

- 3-4 garlic cloves, minced
- 1 inch fresh ginger, grated
- ¼ cup plus 1 Tbsp low-sodium soy sauce
- 2 tsp sriracha
- 1-2 Tbsp sweet chili sauce
- 1 Tbsp toasted sesame oil

- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
Instructions
- Heat the oil and sauté aromatics. In a large, flat-bottomed sauté pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped white parts of the green onions and sauté for 1-2 minutes until fragrant and slightly softened.
- Cook the ground turkey. Add the ground turkey to the pan, breaking it into smaller chunks with a spatula. Cook until browned and no longer pink in the center. In the last minute of cooking, add the minced garlic and grated ginger, stirring to evenly incorporate and release their flavors.
- Add vegetables and soy sauce. Stir in the cole slaw mix and shredded carrots along with ¼ cup plus 1 tablespoon of low-sodium soy sauce. Toss everything together and cook for 4-6 minutes, stirring frequently, until the vegetables are tender but still have some crunch.
- Season and finish the dish. Reduce heat to low. Add 2 teaspoons sriracha, 1-2 tablespoons sweet chili sauce, 1 tablespoon toasted sesame oil, the chopped green parts of the green onions, and chopped cilantro. Toss to combine well and season with ½ teaspoon salt and ½ teaspoon black pepper. Adjust soy sauce to add moisture or saltiness as desired.
- Serve. Serve the egg roll bowl warm, garnished with additional chopped cilantro and a sprinkle of sesame seeds if desired. Enjoy your flavorful, healthy meal!
