Chicken and Seasoning

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil (or vegetable oil)
  • 3 tablespoons Thai seasoning (blend of ground lemongrass, garlic powder, coriander, cumin, dried chili flakes, and paprika)

Glaze

  • ¼ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha
  • 1 tablespoon fresh cilantro, chopped


Instructions

  1. Preheat the Grill: Preheat a grill to medium-high heat, approximately 400°F (204°C), ensuring it’s hot enough to properly sear the chicken thighs.
  2. Season the Chicken: Rub the chicken thighs evenly with olive oil then sprinkle the Thai seasoning over each piece, making sure the seasoning coats both sides for full flavor.
  3. Prepare the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped fresh cilantro until well combined. Set aside.
  4. Grill the Chicken: Place the seasoned chicken thighs on the grill and cook for about 5-6 minutes per side, allowing a nice char to develop while cooking through.
  5. Apply the Glaze: During the last 2 minutes of grilling, generously brush half of the prepared glaze onto the chicken thighs to enhance flavor and caramelize slightly.
  6. Check Doneness and Rest: Remove the chicken from the grill when the internal temperature reaches 160°F (71°C), keeping in mind it will rise to safe temperature while resting. Brush the remaining glaze over the hot chicken and let rest on a cutting board for 5 minutes.
