Ingredients
Scale
Potatoes
- 2 pounds potatoes, cut into wedges
Seasoning & Marinade
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
Toppings
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to ensure the wedges don’t stick and for easy cleanup.
- Toss potatoes with seasoning: In a large bowl, evenly coat the potato wedges by tossing them with olive oil, minced garlic, dried oregano, paprika, salt, black pepper, and freshly squeezed lemon juice for a bright, zesty flavor.
- Arrange on baking sheet: Spread the seasoned potato wedges in a single layer on the prepared baking sheet, making sure they aren’t overcrowded to allow proper roasting and crisping.
- Roast the wedges: Place the baking sheet in the oven and roast the potatoes for 35 to 40 minutes. Flip the wedges halfway through roasting to ensure they cook evenly and develop a golden-brown, crispy exterior.
- Finish and garnish: Once roasted, remove the wedges from the oven and optionally sprinkle with crumbled feta cheese for a creamy, salty touch. Garnish with chopped fresh parsley before serving to add color and fresh herb flavor.
Notes
- For extra crispiness, soak potato wedges in cold water for 30 minutes before cooking and dry thoroughly.
- Adjust seasoning to taste; add more paprika for extra smokiness or less salt if preferred.
- Feta cheese is optional but recommended for authentic Greek flavor.
- These wedges pair well with tzatziki or a garlic yogurt dip.
- Make sure to flip the wedges halfway through roasting to get an even crisp.
