Dressing

- 1/4 cup Olive oil
Instructions
- Prepare the vegetables: Rinse the mixed greens thoroughly and spin dry or pat dry with a paper towel. Chop the tomatoes into bite-sized pieces, slice the cucumber into rounds or half-moons, and thinly slice the red onion.
- Make the dressing: In a small bowl, whisk together the red wine vinegar and olive oil until fully emulsified. Season to taste with salt and freshly ground black pepper if desired.
- Toss the salad: In a large salad bowl, combine the mixed greens, tomatoes, cucumber, and red onion. Pour the dressing over the salad and gently toss until all ingredients are evenly coated.
- Add the croutons: Just before serving, sprinkle the croutons on top to maintain their crunch.
