Description

A quick and delicious Doritos Taco Salad combining seasoned ground beef, fresh vegetables, black beans, crunchy Doritos chips, and your favorite salad dressing for a flavorful Tex-Mex inspired meal that’s perfect for lunch or dinner.

Ingredients

Scale

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Salad Ingredients

  • 3 to 4 Romaine lettuce hearts, rinsed and chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped or 1 cup sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese

Others

  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
  • 1 cup Catalina dressing or your favorite salad dressing (ranch dressing also works well)
  • Fresh cilantro (optional)

Instructions

  1. Cook the ground beef: Brown and crumble the ground beef in a large skillet over medium-high heat. Drain any excess grease carefully. Add taco seasoning and the amount of water specified on the seasoning packet. Stir everything together and bring to a boil. Then reduce the heat to low and simmer for 10 minutes to let the flavors meld. Remove from heat and allow the meat to cool slightly.
  2. Prepare the salad: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled seasoned ground beef to the bowl and gently toss to mix all the ingredients evenly.
  3. Serve with chips and dressing: You can serve the salad immediately or chill it in the refrigerator until ready to eat. Just before serving, add the broken Doritos chips and pour your preferred salad dressing over the top. Toss gently to coat everything in the dressing. Garnish with fresh cilantro if desired and enjoy your crunchy, flavorful taco salad.

Notes

  • Do not add the Doritos chips until just before serving to keep them crispy.
  • Catalina dressing offers a classic tangy flavor, but ranch dressing is an excellent alternative.
  • Feel free to add fresh cilantro to enhance the freshness and aroma of the salad.
  • Rinsing the black beans reduces sodium and improves texture.
  • This recipe serves 4 but can be easily doubled for larger groups.
