For the Cinnamon Chips

- 5 x 10 inch flour tortillas
- ¼ cup (60 ml) oil, or aquafaba (oil gives crispier results)
For the Strawberry Salsa
- 2 lb (32 oz or 907 grams) fresh strawberries, diced
- 1 small lime (juiced)
- 3 tablespoons strawberry jam
- 1 teaspoon vanilla extract
- 1 large handful fresh mint, chopped
- ¼ teaspoon freshly ground black pepper

- Preheat the Oven: Preheat your oven to 350°F (175°C) and line two large baking trays with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
- Mix Cinnamon Sugar: In a small bowl, combine 1 cup of sugar with 1 tablespoon of ground cinnamon. Stir well to evenly distribute the spices, and set aside for later use.
- Prepare the Tortilla Chips: Cut the flour tortillas into chip-sized wedges. Place them on the prepared baking trays. Lightly brush each chip with oil (or aquafaba for a lighter option), then sprinkle generously with the cinnamon sugar mixture. Bake in the preheated oven until crispy, about 10-15 minutes, watching carefully to avoid burning.
- Make the Strawberry Salsa: In a large bowl, combine the diced fresh strawberries with the juice of one small lime, 3 tablespoons of strawberry jam, 1 teaspoon of vanilla extract, chopped fresh mint, and ¼ teaspoon freshly ground black pepper. Mix gently to combine all the flavors.
- Let the Salsa Marinate: Allow the strawberry salsa to sit at room temperature for about 30 minutes. This helps the flavors meld together and intensifies the taste.
- Serve: Once the cinnamon chips are cool and crispy, serve them alongside the strawberry salsa at room temperature for a delightful dessert experience.
