- Prepare the Filling: While the potatoes are boiling, heat olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent and soft, about 5 minutes. Stir in garlic powder, chili powder, salt, and pepper to season the mixture.
- Mash the Potatoes: In a large bowl, mash the drained potatoes until smooth but still slightly chunky. Fold in the sautéed onions and shredded cheese until well combined, creating a flavorful potato filling.
