Ingredients
Scale
Protein & Pasta
- 1 lb boneless, skinless chicken breasts
- 8 oz fettuccine pasta
Seasonings & Oil
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper, to taste
Vegetables
- 1 bell pepper (any color), sliced
- 1 cup onion, sliced
- 2 cloves garlic, minced
Sauce
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
Garnish
- Fresh parsley, chopped
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.
- Prepare the chicken: Pat the chicken breasts dry and season them evenly with the Cajun seasoning, salt, and pepper.
- Sauté the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked through and golden brown. Remove the chicken from the skillet and let it rest before slicing into strips.
- Sauté the vegetables: In the same skillet, add the sliced bell peppers and onions. Cook for 3-4 minutes until they are tender-crisp. Add the minced garlic and sauté for another minute until fragrant.
- Make the sauce: Reduce the heat to medium and pour in the heavy cream. Stir in the grated Parmesan cheese until it melts and forms a creamy sauce. Season with salt and pepper to taste.
- Combine everything: Add the cooked fettuccine pasta and sliced chicken into the skillet with the sauce and vegetables. Toss everything together thoroughly to coat all ingredients in the creamy Cajun sauce.
- Garnish and serve: Sprinkle freshly chopped parsley over the top for a burst of color and freshness. Serve immediately while hot.
