Ingredients
Scale
Puff Pastry Base
- 1 sheet puff pastry (thawed if frozen)
Fruit Topping
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Custard Filling
- 1/2 cup granulated sugar (adjust to taste)
- 1 cup heavy cream
- 3 large eggs
- 2 tsp pure vanilla extract
- Pinch of salt
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is at the right temperature for baking the tart evenly.
- Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface to prevent sticking. Carefully place it into a tart pan, pressing the dough gently into the corners to cover the base and sides evenly.
- Make Custard Mixture: In a mixing bowl, whisk together the heavy cream, eggs, granulated sugar, vanilla extract, and a pinch of salt until the mixture is smooth and fully combined, forming the custard base.
- Layer Berries and Pour Custard: Arrange the mixed berries evenly over the puff pastry base, distributing them so each slice will have a mix. Slowly pour the custard mixture over the berries, allowing it to fill in between the fruit and cover them.
- Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes or until the puff pastry is golden brown and the custard is set and slightly puffed.
- Cool and Serve: Remove the tart from the oven and allow it to cool slightly so the custard firms up further. Slice and serve warm or at room temperature for best flavor.
Notes
- Ensure the puff pastry is fully thawed before rolling to prevent cracking.
- Adjust the sugar amount depending on the sweetness of your berries.
- Use a tart pan with a removable bottom for easier serving.
- Let the tart cool slightly to allow the custard to set completely before slicing to avoid runny pieces.
- Fresh berries work best; frozen berries can be used but should be thawed and drained to prevent excess moisture.
