- 2 large boneless, skinless chicken breasts
- 3/4 cup frozen corn, thawed
- 3/4 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- Shredded romaine lettuce, as needed

- 1/2 cup sharp cheddar cheese
- 1/2 cup barbecue sauce
- 1/2 cup ranch dressing

- 1 tablespoon olive oil
- Salt & pepper, to taste
- 6 whole wheat tortillas
Instructions
- Prepare the skillet and chicken: Heat olive oil in a large skillet over medium-high heat, or alternatively use cooking spray.
- Cook the chicken: Season the chicken breasts with salt and pepper. Place them in the heated skillet and cook for approximately 5 to 6 minutes per side, or until fully cooked through with an internal temperature of 165°F (74°C). Cover with foil to rest for a couple of minutes, then remove foil and dice the chicken into bite-sized pieces. (Grilling the chicken is also an option.)
- Mix the filling: In a large bowl, combine the diced chicken, thawed corn, rinsed black beans, diced tomatoes, and shredded cheddar cheese. Drizzle barbecue sauce and ranch dressing over the mixture, tossing gently until everything is evenly coated.
- Assemble the wraps: Lay out a whole wheat tortilla and place a layer of shredded romaine lettuce on top. Add a couple of large spoonfuls of the chicken mixture over the lettuce. Roll up the tortilla tightly to enclose the filling.
- Serve: Serve the wraps immediately for a fresh and flavorful meal, or wrap them for a packed lunch option.
